Ingredients: 250 g pea milk; 60 g trimoline; 50 g sugar; 70 g dextrose; 10 g inulin; 2 1/2 g lemon (zest); 400 g NXT dark chocolate DFD-55; 25 g margarine ((vegetable)); 500 g vegan chocolate (tempered (milk or dark chocolate)); 120 g almond slices

Method

Get cooking

Bring the pea milk, trimoline, sugar and dextrose to a boil.
Add the inulin and lemon zest and continue cooking.
Pour the mixture over the chocolate and emulsify with a hand blender for 1 minute.
Add the margarine and emulsify for another 2 minutes.
Pour the mixture onto a tray and cover with cling film until firm enough to pipe.
Pipe small balls and put them in the freezer for 30'.
Pass the balls through tempered chocolate and then roll them through almond slivers.
