Vegan truffle – Comaschi 1

Ingredients
 

Ganache

  • 250 Gr pea milk
  • 60 Gr Trimoline
  • 50 Gr sugar
  • 70 Gr dextrose
  • 10 Gr Inulin
  • 2,5 Gr lemon ( gesture)
  • 400 Gr NXT Dark Chocolate DFD-55
  • 25 Gr margarine ((vegetable))

Finishing

  • 500 Gr vegan chocolate (tempered (milk or fondant))
  • 120 Gr almond slices

Instructions

  • Bring the pea milk, trimoline, sugar and dextrose to a boil.
  • Add inulin and lemon gesture; Let it continue to cook.
  • Pour the mixture over the chocolate and emulsify with a hand blender for 1 minute.
  • Add the butter and emulsify for another 2 minutes.
  • Pour the mixture onto a plate and cover with plastic wrap until sprayable.
  • Pipe small balls and put them in the freezer for 30′.

  • Dip the balls in tempered chocolate and then roll them in the almond slices.
