Ingrediënten
- 2 el olive oil
- 1 onion finely chopped
- 1 white of leeks finely chopped
- 1 Kg Carrots peeled and cut into pieces
- 2 litre vegetable broth
- 1 el herb cheese
- pepper to taste
- salt to taste
Werkwijze
- Heat some olive oil in a large stockpot over medium-high heat. Add the carrots, onion, and leeks and fry lightly.
- Add the vegetable stock and bring to a boil. Let the soup simmer for 30 minutes until the carrots are soft.
- Puree the soup with a hand blender until smooth.
- Stir the herb cheese into the soup and heat for a few more minutes.
- Add the juice of 1 orange. (optional)
- Season with salt and pepper. Serve the soup
- Garnish with parsley, dill, and basil leaves. (optional)
