Sweet and spicy Chinese tomato soup with chicken and apple sauce

1. Bring the chicken stock to the boil and add the chicken legs. Simmer gently for approximately 30 min or until the chicken is cooked.
2. Remove the chicken legs from the stock and let them cool a little.
3. Add the grated ginger, apple sauce, sugar and tomato purée to the stock. Stir well and simmer gently for 10 minutes.
4. Add the soy sauce and taste to check the seasoning. Add extra sugar or soy sauce if desired.
5. Add the noodles to the soup and cook according to the packet instructions.
6. Pick the meat from the bones and cut into pieces. Add the shredded chicken to the soup and heat everything through for a few more minutes.

Optional

1. Add a knife-tip of sambal oelek to the soup.
2. Serve the soup in bowls and garnish with spring onion and/or coriander.
