Instructions
Heat some olive oil in a large soup pan over medium-high heat. Add the carrots, onion, and leeks and sauté lightly.
Add the vegetable stock and bring to a boil. Simmer the soup for 30 minutes until the carrots are soft.
Puree the soup with a hand blender until smooth.
Stir the herb cheese into the soup and heat for a few more minutes.
Add the juice of 1 orange. (optional)
Season to taste with salt and pepper. Serve the soup
Garnish with leaves of parsley, dill, and basil. (optional)
