Ingredients
- 2 egg yolks
- 1 tbsp Dijon mustard
- 2 cloves garlic (chopped)
- 4 anchovy fillets (chopped)
- 2 tbsp fresh lemon juice

- 60 g grated Parmesan cheese
- 1 tsp Worcestershire sauce
- Salt (to taste)
- Pepper (to taste)
Instructions
- Mix the egg yolks, Dijon mustard, garlic and anchovy fillets in a narrow tall pot.
- Add the lemon juice and white wine vinegar and mix well.
- Start the blender and slowly add the olive oil until the dressing is thick and creamy.
- Add the grated Parmesan cheese and mix well.
- Season with salt, pepper and Worcestershire sauce.
- Taste and adjust the flavor if necessary.
- Serve immediately or store in the refrigerator for later use.
