  • Rinse the cucumber. Peel if desired and grate coarsely.
  • Put the grated cucumber in a clean tea towel and squeeze out as much moisture as possible.
  • Chop or press the garlic. Finely chop the dill.
  • In a large bowl, mix the Greek yogurt, squeezed cucumber, chopped garlic, olive oil, white wine vinegar and dill.
  • Season to taste with salt and pepper. Taste and adjust seasonings if necessary.
