  • In a large bowl, mix together the ground beef, oregano, grated Parmesan cheese, pezo, egg, garlic, and breadcrumbs thoroughly.
  • Shape the mixture into small balls the size of a golf ball.
  • Cut the bacon into thin slices and wrap each ball in a slice of bacon.
  • Heat the Big Green Egg (BGE) or another BBQ to 180°C, and make sure to grill indirectly (place a drip tray under the grid to avoid direct contact of the flames with the meat).
  • Place the balls on the BBQ and smoke them until they reach a core temperature of about 70°C. Add apple or cherry wood for an extra touch of smoke.
  • Brush the balls with the BBQ sauce and let them cook for another 5 minutes on the BBQ.

  • Serve warm and enjoy!

  • For juicier balls, consider lowering the temperature and increasing the cooking time accordingly.
  • As an alternative to the BBQ, these Moink Balls can also be prepared in the oven at 180°C, but you will miss the smoky taste of the wood.
