- Put a knob of butter in the sauce pan.
- Start by gently frying the chopped shallot and garlic in a sauce pan until soft and glazy.
- Add the game stock and reduce to about half over medium heat.
- Add the spices.
- Pour in the port and further reduce the sauce to a desired thickness.
- Add the berries to the sauce and cook for a few minutes.
- Taste first and, if necessary, season the sauce with salt and pepper.
- Pour the sauce through a colander.
- Serve the sauce hot over your favorite game dish or grilled meat.
