Red Port Sauce with Berries

Ingredients
 

  • 1 lump butter
  • 1 shallot (chopped)
  • 1 clove garlic (chopped)
  • 250 ml water
  • 7 g Game broth Piet Huysentruyt
  • 1 kl thyme
  • 2 leaves laurel
  • 150 ml Red Porto
  • 200 g Cranberries Nature

Instructions

  • Put a knob of butter in the sauce pan.
  • Start by gently frying the chopped shallot and garlic in a sauce pan until soft and glazy.
  • Add the game stock and reduce to about half over medium heat.
  • Add the spices.
  • Pour in the port and further reduce the sauce to a desired thickness.
  • Add the berries to the sauce and cook for a few minutes.

  • Taste first and, if necessary, season the sauce with salt and pepper.
  • Pour the sauce through a colander.
  • Serve the sauce hot over your favorite game dish or grilled meat.
