Ingredients
- 200 g onion
- 150 g carrots
- 40 g tomato paste
- 30 g butter
- 1 1/2 cube vegetable broth ((or chicken stock))
- 2 potatoes
- 1 l water
- 300 g tomatoes
Instructions
- Cut up all the vegetables
- Sauté the onion in some butter for a few minutes over medium heat.
- Add the tomato paste and stir well
- Add the carrots, tomatoes, bacon and bouillon cubes.
- Moisten the vegetables with 1 liter of water
- Let all this cook gently for a 1/2 hour.
- When everything is cooked, the soup can be blended.
- Pour the soup through a sieve
- Usually there is plenty of salt in the soup thanks to the stock cubes (and the bacon) but you are free to add extra seasoning here.
