Ingredients
- 200 g onion
- 150 g root
- 40 g tomato paste
- 30 g butter
- 1 1/2 cube vegetable broth ((or chicken broth))
- 2 potatoes
- 1 l water
- 300 g tomatoes
Instructions
- Cut all the vegetables
- Stew the onion in some butter for a few minutes over medium heat.
- Add the tomato paste and stir well
- Add the carrots, tomatoes, bacon and stock cubes.
- Moisten the vegetables with 1 liter of water
- Let it simmer for 1/2 hour.
- When everything is cooked, the soup can be mixed.
- Pour the soup through a sieve
- Usually there is enough salt in the soup thanks to the stock cubes (and the bacon) but you are free to season the soup extra here.
