Instructions

  • In a large bowl, mix well the beef mince, oregano, grated Parmesan cheese, pezo, egg, garlic and breadcrumbs.
  • Form small golf ball-sized balls from the mixture.
  • Cut the breakfast bacon into thin slices and wrap each ball in a slice of bacon.
  • Heat the Big Green Egg (BGE) or other BBQ to 180°C, and make sure you grill indirectly (place a drip pan under the grill to avoid direct contact of the flames with the meat).
  • Place the balls on the BBQ and smoke them until they reach a core temperature of about 70°C. Add apple or cherry wood for an extra smoky touch.
  • Brush the meatballs with the BBQ sauce and continue cooking on the BBQ for another 5 minutes.

  • For juicier balls, consider lowering the temperature and increasing the cooking time accordingly.
  • As an alternative to the BBQ, these Moink Balls can also be cooked in the oven at 180°C, but you will miss the smoky flavor of the wood.
