Meatloaf with Sweet Cherry Sauce

A hearty combination of classic meatloaf or meatloaf and a sweet and sour cherry sauce, perfect for a cozy family meal.

Ingredients
 

The meat loaf

  • 1 kg mince (mixed)
  • 1 onion (chopped)
  • 1 clove look (chopped, pressed)
  • 100 g breadcrumbs
  • 1 tbsp mustard
  • 1 kl thyme (or italian herb mixture)
  • salt (to taste)
  • pepper (to taste)

The crickets

  • 1 pot cherries
  • 1 tbsp cornstarch
  • 1 tbsp sugar (brown – optional)

Instructions

The meat

  • Preheat the oven to 180°C.
  • Mix the minced meat with onion, garlic, egg, breadcrumbs, mustard, thyme, salt and pepper.
  • Season to taste with salt and pepper.
  • Form into a loaf and place in a greased baking dish.
  • Bake the meat loaf for 45 minutes in the preheated oven. A core temperature of 65°C is desired.

Cherry Sauce

  • Put the cherry juice in a saucepan, adding additional sugar if desired. Bring to a boil.
  • Dissolve the cornstarch in a little water (or cherry beer) and add to the cherry juice.
  • Once thickened, add the chickpeas and set over very low heat.

Finish

  • Slice the meat loaf to the desired thickness and serve with the warm cherry sauce.
