  • Fold 4 thin pancakes into quarters. Sprinkle with sugar
  • Melt a knob of butter in the pan
  • Place the 4 pancakes with the sprinkled sugar side down. The goal is for the sugar to caramelize, so the heat should be set quite high.
  • Sprinkle the top with sugar and flip
  • Pour the alcohol over the pancakes and flambé
  • When the fire is extinguished, add the fruit juice. Let some boil.
  • Serve with a scoop of vanilla ice cream
