Ingredients
- 2 tbsp olive oil
- 1 onion (chopped)
- 1 white of leek (chopped)
- 1 kg carrots (peeled and cut into pieces)
- 2 l vegetable broth
- 1 tbsp herb cheese
- pepper (to taste)
- salt (to taste)
Instructions
- Heat some olive oil in a large soup pan over medium-high heat. Add the carrots, onion, and leeks and sauté lightly.
- Add the vegetable stock and bring to a boil. Simmer the soup for 30 minutes until the carrots are soft.
- Puree the soup with a hand blender until smooth.
- Stir the herb cheese into the soup and heat for a few more minutes.
- Add the juice of 1 orange. (optional)
- Season to taste with salt and pepper. Serve the soup
- Garnish with leaves of parsley, dill, and basil. (optional)
