Instructions
The tomatoes
- If desired, you can emote the tomatoes : cut a small cross on the bottom of each tomato and submerge them in boiling water for 10-20 seconds. Then move them to a bowl of cold water and peel off the skin.
- Slice or portion the tomatoes with a tomato knife.
- Arrange the tomato slices or wedges on a plate or platter.
- Shred the onion finely or or in long strips. Scatter over the tomatoes.
Vinaigrette
- Combine the olive oil, balsamic vinegar, mustard, honey (or maple syrup) in a small bowl. Mix well with a whisk until the ingredients are well blended. Season to taste with salt and pepper.
Just before serving
- Pour the vinaigrette over the tomatoes.
- If using basil, add it to the salad now.
