Ingredients
- 4 large roots (peeled and grated)

- 3 tbsp orange juice (fresh )

- 2 tbsp parsley (chopped, fresh )
Instructions
- In a large bowl, mix the grated carrots with salt and pepper.
- In a small bowl, combine the honey, orange juice, and olive oil. Stir well to make a uniform dressing.
- Pour the dressing over the carrots and mix well so that all the carrots are covered with the dressing.
- Sprinkle the salad with chopped parsley and mix again.
- Let the salad rest for 5 minutes before serving to allow the flavors to mingle.
