Pizza dough – basic recipe

Ingredients
 

  • 500 g flour (patiserrie or 00)
  • 300 g lukewarm water
  • 21 g yeast (fresh 1/2 packet or 7g dry yeast)
  • 8 g salt
  • 1 tsp of sugar
  • 2 tbsp olive oil

Instructions

  • Gather all the ingredients.
  • Mix 21 g yeast in a bowl. Let the mixture stand until the yeast is absorbed.

By hand

  • Mix 1 tsp of sugar and 8 g salt through the flour. Place the mixture on a work surface. Make a circle and a dimple in the center.
  • Pour in the yeast mixture, along with 2 tbsp olive oil. Mix first with a fork and then with your hands to form a cohesive dough.
  • Then knead the dough for 10 minutes on a lightly floured work surface until elastic and pliable.

With the kitchen robot

  • If using a food processor, add 500 g flour, 8 g salt, 1 tsp of sugar and the yeast mixture and 2 tbsp olive oil to the mixing bowl. Use the dough hook and knead the dough on medium speed for 5-7 minutes, until the dough is elastic and pliable.

Dividing the dough

  • You can make 4 normal pizza bases with this dough. Divide the dough into 4 equal balls.

Rise

  • Place the 4 dough pieces on a lightly floured board, leaving enough space between the balls, cover with a damp cloth and let rise in a warm place for at least 90 minutes, until the dough has doubled in volume.

Finish

  • You can freeze the risen dough by first rolling it in plastic wrap. You can also store this dough in plastic wrap for several days in the refrigerator.
    You can also immediately roll them out into a nice pizza crust. Ready to finish further.
