Croque

  • 8 Slices bread (white or to taste)
  • 4 slices ham
  • 8 slices cheese (Gruyère, Emmental or to taste)
  • butter (to grease the bread with)
  • 100 gr cheese (grated)

Béchamel sauce

Instructions

Béchamel sauce

  • Melt the butter in a saucepan over medium-high heat.
  • Add the flour and stir constantly for 1-2 minutes until a roux forms.
  • Add the milk gradually and keep stirring to avoid lumps.
  • Season the sauce with nutmeg, pepper and salt. Cook (gently) the béchamel until smooth and thick. Set aside.

Prepare the Croque Monsieur

  • Spread one side of 8 Slices bread with a layer of butter.
  • On an ungreased side of the bread, place a slice of ham and two slices of cheese.
  • Cover with a second slice of bread, buttered side out.

Bake

  • Heat a grill pan or croque-monsieur appliance over medium-high heat.
  • Place the croques in the pan and cook for 3-4 minutes on each side, until the cheese is melted and the bread is nice and golden brown and crispy.
  • Place the toasted croques on a baking sheet. Brush the top with a layer of béchamel sauce and sprinkle with the grated cheese.

Gratin

  • Heat the oven to grill setting and place the croques under the grill until the cheese is melted and golden brown.

Presentation

  • Serve immediately, possibly on a wooden board, along with a small portion of salad.
