Method

Get cooking

Prepare the Croque Madame

Spread butter on one side of 8 slices of bread.
Place a slice of ham and two slices of cheese on an unbuttered side.
Cover with a second slice of bread, buttered side facing outwards.

Cooking

Heat a griddle pan or sandwich toaster over a medium heat.
Cook the sandwiches for 3–4 minutes on each side until the cheese melts and the bread is golden and crisp.
Time range: choose the first timer to check progress or the last for the end of the stated time.
Cooking for a crowd? Keep the cooked sandwiches on a plate in an oven set to no more than 100 °C while you cook the remaining batches.

Fry the eggs

Meanwhile, fry the eggs in a pan with a little butter, keeping the yolks intact.

Serving

Top each Croque Monsieur with a fried egg to make a Croque Madame.
Serve immediately, perhaps on a wooden board, with a small salad.
