Tagliatelle with vegetables and blue cheese

A culinary adventure of tagliatelle with creamy blue cheese and a colorful mix of green vegetables. With frozen vegetables if it has to be quick but of course always better with version vegetables.

Ingredients
 

  • 1 lump butter
  • 1 onion (chopped)
  • 1 clove garlic (crushed, finely chopped)
  • 750 g green vegetable mix (romanesco, beans, ertwen,zucchini)
  • 350 ml vegetable broth
  • pepper (to taste)
  • salt (to taste)
  • 500 g pasta (tagliatelle)
  • 1/2 kl thyme (dried)
  • 1/2 kl laurel (dried)
  • 1/2 kl tarragon (dried)
  • 200 g blue cheese

Instructions

  • Melt 1 lump butter in a large saucepan.
  • Shred 1 clove garlic and 1 onion and add to the pan. Simmer for a few minutes.
  • Add the 750 g green vegetable mix. Simmer for a few minutes and finally add 350 ml vegetable broth. Cook for 10 minutes, the first half of which should be under cover.
  • Meanwhile, put on the water for the tagliatelle.
  • Drain but save the liquid for the sauce! Return the vegetable broth to the heat.
  • Chop the 200 g blue cheese and add to the vegetable broth. Stir frequently and heat gently.
  • Taste and finish with pepper, salt, 1/2 kl thyme, 1/2 kl laurel and1/2 kl tarragon
  • Cook the 500 g pasta until tender, drain.
  • Set out a suitable plate. Put some tagliatelle on top and then a few scoops of sauce. Finish by adding several scoops of vegetables. Place a brocolli in the center.
  • Palatable.
