Preparing dough by hand
- Heat 225 ml milk lukewarm and dissolve 42 g yeast in it. Let stand for a few minutes.
- Mix 500 g flour and 8 g salt and 80 g sugar in a large bowl.
- Add the yeast mixture, 1 egg, 60 g butter and a pinch of cinnamon to the flour. Knead the dough with your hands until smooth and elastic, this takes about 10 minutes.
Preparing dough with the food processor
- Heat 225 ml milk to lukewarm and dissolve 42 g yeast in it. Let stand for a few minutes.
- Put 500 g flour and 8 g salt and 80 g sugar into the bowl of the food processor.
- Add the yeast mixture, 1 egg, a pinch of cinnamon and 60 g butter. Set the food processor on medium-high speed and knead the dough for 5-7 minutes until smooth and elastic.
Preparing dough with the Monsieur Cuisine or similar appliance
- Heat 225 ml milk to 37°C in the Monsieur Cuisine and add 42 g yeast. Mix for 2 minutes on speed 1.
- Add 500 g flour , 8 g salt, 1 egg , 80 g sugar and 60 g butter and a pinch of cinnamon add. Set the machine to knead mode for 3x 1 minute.
- Check the dough, lay out on a floured work surface if necessary, and finish.
Rise
- Cover the bowl with a towel and let the dough rise for at least 30 minutes until it has doubled in volume.
- Prepare a baking sheet covered with baking paper.
- Roll out the dough to about 1 to 1.5 cm (finger thickness) and punch out using the die cutter. Place on the baking sheet and let rise for another 30 minutes.
Serving tip
Serve the Saint Nicholas buns lightly warmed with a layer of butter and a slice of cheese. Perfect to combine with a cup of hot chocolate for the ultimate Sinterklaas experience!Tips
- Make sure that you have similar sized cake pans. This is because the baking time may differ depending on the size of the cutout.
- Klaaskoek or Saint Martin cake – in some regions Saint Martin is celebrated on Nov. 11 – Saint Nicholas is celebrated on Dec. 6.
- Meanwhile, the same recipe is actually used for Christmas cake, Valentine’s cake and Easter cake, only the cut-out shape is different, of course.
