- Preheat the oven to 180°C.
- Lightly grease the single-person cake pans. Line each mold with leftover puff pastry. Make sure the edges are well covered and poke a few holes in the bottom with a fork.
- Divide the 100 g sprouts cut into quarters over the puff pastry bottoms.
- Beat the 2 eggs with the 2 tbsp cream and season with peppersalt and Oregano.
- Pour the egg mixture over the Brussels sprouts in the molds.
- Bake the mini-quiches for 20-25 minutes in the preheated oven, until the top is golden brown and the egg mixture is firm.
- Let the quiches cool briefly before removing them from the molds and serving.
