The meat
- Preheat the oven to 180°C.
- Mix the minced meat with onion, garlic, egg, breadcrumbs, mustard, thyme, salt and pepper.
- Season to taste with salt and pepper.
- Form into a loaf and place in a greased baking dish.
- Bake the meat loaf for 45 minutes in the preheated oven. A core temperature of 65°C is desired.
Cherry Sauce
- Put the cherry juice in a saucepan, adding additional sugar if desired. Bring to a boil.
- Dissolve the cornstarch in a little water (or cherry beer) and add to the cherry juice.
- Once thickened, add the chickpeas and set over very low heat.
Finish
- Slice the meat loaf to the desired thickness and serve with the warm cherry sauce.
