Ingredients

  • 200 g viande séchée (dried meat, thinly sliced)
  • 150 g jambon cru (raw ham similar to prosciutto or serrano ham)
  • 100 g lard sec (dried bacon)
  • 150 g saucisse sèche (dried sausage, sliced)
  • 200 g Valais cheese (e.g. raclette cheese, sliced)
  • cornichons (small pickles – a handful)
  • Onions – a handful
  • Fresh rye bread or baguette (sliced)
  • butter (to taste)

Instructions

  • Place the meats (viande séchée, ham, coppa, and saucisson) neatly on a large plate or board. Try to make a nice pattern by alternating the different meats.
  • Place the cheese slices on the plate next to the meat. Make sure there is a nice selection for everyone.
  • Add small mounds of cornichons and pearl onions to the plate. This gives a fresh, sour flavor that goes well with the salty meat and cheese.
  • Serve with slices of fresh rye bread or baguette. Add some butter, if desired, for a creamy touch.

This version of the recipe was inspired by my vacation experience.
The profile photo of the dish shows it as served at restaurant Les Bisses in Haute-Nendaz Switzerland, where I enjoyed their authentic Assiette Valaisanne during my vacation.
I also enjoyed this dish at Les Chottes. See photo below.
