Quiche with Brussels sprouts

Delicious one-person tarts with Brussels sprouts, perfect as a side dish or light meal. Made with leftover ingredients from Brussels sprouts and puff pastry.

Ingredients
 

  • leftover puff pastry (Enough to make two single tails)
  • 2 eggs
  • 100 g sprouts (boiled, cut into quarters)
  • 2 tbsp cream
  • pepper (to taste)
  • salt (to taste)
  • Oregano (to taste)

Instructions

  • Preheat the oven to 180°C.
  • Lightly grease the single-person cake pans. Line each mold with leftover puff pastry. Make sure the edges are well covered and poke a few holes in the bottom with a fork.
  • Divide the 100 g sprouts cut into quarters over the puff pastry bottoms.
  • Beat the 2 eggs with the 2 tbsp cream and season with peppersalt and Oregano.
  • Pour the egg mixture over the Brussels sprouts in the molds.
  • Bake the mini-quiches for 20-25 minutes in the preheated oven, until the top is golden brown and the egg mixture is firm.
  • Let the quiches cool briefly before removing them from the molds and serving.
