Chicory salad

A quick and simple side dish with Belgium endive and mayonnaise. Fresh and crunchy!

Ingredients
 

  • 4 stumps Belgium endive
  • 3 tbsp mayonnaise
  • 1 tbsp. lemon juice
  • pepper (to taste)
  • salt (to taste)

Instructions

  • Cut off the hard end of the chicory stalks, cut into 2 lengthwise and remove the bitter core.
  • Cut the Belgium endive into thin strips.
  • In a bowl, mix the mayonnaise with the lemon juice, salt and pepper.
  • Add the sliced Belgium endive to the bowl and mix well with the mayonnaise.
  • Let rest briefly in the refrigerator for a fresh taste.
