Instructions
pak choi
- Rinse the pak choi thoroughly.
 - Cut off the bottom hard part. Cut the white stems into pieces and sauté for 4-5 minutes in a knob of butter (with garlic if desired).
 - Then add the green leaves and saute for another 1-2 minutes.
 - Drain in a sieve so that excess liquid disappears.
 
Potatoes
- Peel the potatoes and cut into equal pieces.
 - Cook the potatoes until tender in about 20 minutes.
 - Pour off the water and potatoes back into the pot. Let stand for a few minutes and allow remaining liquid to evaporate.
 - Add the butter and milk and mash with a masher. Finish with an egg to make a creamy puree.
 - Season with salt, pepper and a pinch of nutmeg, some cayenne pepper if desired
 - Mix the drained pakoi into the puree.
 - Serve the pak choi puree warm as a side dish.

Variations
- Add a little honey for an even sweeter touch.
 - Extra creaminess can be obtained by adding egg yolks or a spoonful of sour cream.
