The preparation is very similar to regular mashed potatoes, but the secret is in cooking the pak choi separately.
By briefly stewing the white stems and allowing the leaves to shrink only briefly, you maintain a beautiful green color and fresh flavor.
Then everything combines with the potatoes, butter and milk to form a creamy, light puree.

Also goes great with chicken with oyster sauce, or a piece of fried salmon.

pak choi

  • Rinse the pak choi thoroughly.
  • Cut off the bottom hard part. Cut the white stems into pieces and sauté for 4-5 minutes in a knob of butter (with garlic if desired).
  • Then add the green leaves and saute for another 1-2 minutes.
  • Drain in a sieve so that excess liquid disappears.

Potatoes

  • Peel the potatoes and cut into equal pieces.
  • Cook the potatoes until tender in about 20 minutes.
  • Pour off the water and potatoes back into the pot. Let stand for a few minutes and allow remaining liquid to evaporate.
  • Add the butter and milk and mash with a masher. Finish with an egg to make a creamy puree.
  • Season with salt, pepper and a pinch of nutmeg, some cayenne pepper if desired
  • Mix the drained pakoi into the puree.
  • Serve the pak choi puree warm as a side dish.
