Ingredients: 1 tbsp olive oil; 2 pieces onions (chopped); 2 cloves garlic (chopped); 1 kg courgette (peeled, chopped into pieces); 2 l vegetable stock; 1/2 tsp curry; salt (to taste); pepper (to taste)

2 cloves garlic (chopped)
1 kg courgette (peeled, chopped into pieces)
2 l vegetable stock
1/2 tsp curry
salt (to taste)
pepper (to taste)

Method

Get cooking

Gather the ingredients.
Chop the onion and garlic.
Peel the courgette, chop into large chunks.
Sauté the onion in olive oil for a few minutes over medium heat. Add the garlic.
Add the diced courgette. Let it fry briefly with the rest.
Add the vegetable stock.
Let simmer gently for 20 minutes.
Add half a teaspoon of curry powder towards the end.
Mix everything well, taste and season to flavour. Allow about 5 minutes for blending and finishing.

Tip

Use a balanced ratio of courgette to stock, for example 500 g courgette to 1 litre stock.
