Instructions
Preparing prawns:
Peel the prawns and set the peeled prawns aside, refrigerate.
Place the remaining peels in a saucepan, cover with water and reduce for 20 minutes. Mix briefly after 15 minutes and cook for another 5 minutes to extract maximum flavor for your stock.
Strain the mixture, reserving the liquid, and reduce further. Divide the liquid into two parts: half a liter for the sauce and the rest for cooking the pasta.
Preparing Sauce:
Fry the chopped garlic and onions in a wide, large pan with a little butter.
After a few minutes, add a few small ladles of fond and reduce for 2 minutes.
Add the Heinz Frito and herb cheese, stir well. Add additional fond if necessary to achieve desired consistency.
Add the prawns and season with salt, pepper, and a pinch of cayenne pepper.
Cut the cherry tomatoes in half and add to the pan.
Cooking Pasta:
Bring a pot of water to a boil and add the pasta. Cook the pasta in the remaining prawn liquid until al dente.
Drain and add to the pan with the sauce.
Serve:
Mix everything well and finish with fresh parsley.
Divide among plates and enjoy!

Pasta
Spaghetti, capellini, tagliatelle, ... Pick your favorite.
Cheese
In this recipe, I used a classic herb cheese, but feel free to experiment with different kinds. An herb cheese usually results in a mild flavor, while a mold cheese will provide a more pronounced taste.
Tomato paste
You can choose between Heinz Frito or a classic concentrated tomato paste. Both options are possible, but my preference is Heinz Frito because this sauce has a more pronounced flavor than a classic concentrated tomato paste.
Fund
Peeling the prawns and making the fund can be quite time-consuming in this recipe. A quicker alternative might be to use already peeled shrimp and a lobster paste as a substitute for the fund.
Finish
You can add an extra party touch by placing a few prawns unpeeled at the top of the dish.
