A tasty variation on classic mashed potatoes - with pak choi for extra flavor and color.

Instructions
pak choi
Rinse the pak choi thoroughly.
Cut off the bottom hard part. Cut the white stems into pieces and sauté for 4-5 minutes in a knob of butter (with garlic if desired).
Then add the green leaves and saute for another 1-2 minutes.
Drain in a sieve so that excess liquid disappears.
Potatoes
Peel the potatoes and cut into equal pieces.
Cook the potatoes until tender in about 20 minutes.
Pour off the water and potatoes back into the pot. Let stand for a few minutes and allow remaining liquid to evaporate.
Add the butter and milk and mash with a masher. Finish with an egg to make a creamy puree.
Season with salt, pepper and a pinch of nutmeg, some cayenne pepper if desired
Mix the drained pakoi into the puree.
Serve the pak choi puree warm as a side dish.

Variations
Add a little honey for an even sweeter touch.
Extra creaminess can be obtained by adding egg yolks or a spoonful of sour cream.
Cooking an onion and/or a clove of garlic with it adds flavor.
