pak choi

  • Rinse the pak choi thoroughly.
  • Cut off the bottom hard part. Cut the white stems into pieces and sauté for 4-5 minutes in a knob of butter (with garlic if desired).
  • Then add the green leaves and saute for another 1-2 minutes.
  • Drain in a sieve so that excess liquid disappears.

Potatoes

  • Peel the potatoes and cut into equal pieces.
  • Cook the potatoes until tender in about 20 minutes.
  • Pour off the water and potatoes back into the pot. Let stand for a few minutes and allow remaining liquid to evaporate.
  • Add the butter and milk and mash with a masher. Finish with an egg to make a creamy puree.
  • Season with salt, pepper and a pinch of nutmeg, some cayenne pepper if desired
  • Mix the drained pakoi into the puree.
  • Serve the pak choi puree warm as a side dish.

Variations

  • Add a little honey for an even sweeter touch.
  • Extra creaminess can be obtained by adding egg yolks or a spoonful of sour cream.
  • Cooking an onion and/or a clove of garlic with it adds flavor.
