Instructions
Heat a little butter in a large skillet over medium-high heat.
Carefully break the eggs into the pan and cook for 2-3 minutes, or until the white is set but the yolk is still runny.
While the eggs are baking, toast the bread until crisp.
Place each egg on a slice of toasted bread.
Shave the Tête de Moine cheese with the girolle and spread it over the eggs.
Season with salt and pepper, and garnish with fresh herbs if desired.
