Put the eggs, milk and brown sugar in a cup and stir well.
Put the pan on, add a knob of butter. Don't set too high.
Put the mixture in a deep plate, large enough to shell 1 slice of bread.
Dip a slice of bread into the mixture. Dip the bread well.
Place the slice of bread in the pan. Be careful - this can turn black quickly. Depending on how high your heat is, you may have to turn the bread after less than half a minute.
Lightly brown on both sides and serve on a plate.
Garnish with some icing sugar or your favorite sugar.
