Instructions
In a large mixing bowl combine the grated carrots, diced apple and raisins.
In a small bowl, mix apple cider vinegar, honey and olive oil until smooth.
Pour the dressing over the carrot-apple mixture and stir well so that everything is well coated.
Season to taste with salt and pepper.
Let the salad soak for at least 5 minutes before serving to allow the flavors to mix well.
