Chicory salad
A quick and simple side dish with Belgium endive and mayonnaise. Fresh and crunchy!

Instructions
Cut off the hard end of the chicory stalks, cut into 2 lengthwise and remove the bitter core.
Cut the Belgium endive into thin strips.
In a bowl, mix the mayonnaise with the lemon juice, salt and pepper.
Add the sliced Belgium endive to the bowl and mix well with the mayonnaise.
Let rest briefly in the refrigerator for a fresh taste.

Tips
You can make a richer chicory salad by adding nuts or apples.
You can replace mayonnaise (partially) with yogurt to have a lighter version.
