Cut off the hard end of the chicory stalks, cut into 2 lengthwise and remove the bitter core.
Cut the Belgium endive into thin strips.
In a bowl, mix the mayonnaise with the lemon juice, salt and pepper.
Add the sliced Belgium endive to the bowl and mix well with the mayonnaise.
Let rest briefly in the refrigerator for a fresh taste.
