Bruschetta with pea mash and anchovies

an ideal (and hearty) snack on the BBQ during appetizers

Ingredients
 

  • 1 serving peas ((small can or from the freezer))
  • 3 slices goat cheese or herb cheese ((1 cm slices))
  • 2 tbsp water
  • 2 tbsp olive oil
  • salt and pepper
  • 1 can anchovies
  • 1/2 baguette

Instructions

The ertwen puree

  • Place the peas and cheese in the bowl of the blender
  • Add water and oil and mix well
  • Season with salt and pepper
  • If too dry, feel free to add more moisture (water or oil)
  • Taste and further season with salt and pepper

The finishing

  • Cut the baguette into slices
  • You can rub the baguette with your favorite olive oil
  • Top the baguette and finish with an anchovy on top of the ertwen puree
  • Put the baguette on the bbq for a while, try to cook the grill at the bottom of the bread. Beware the line between nice and crispy and burnt is razor thin....
